Bacon, Kale, Cheese Frittata Breakfast Recipe
May 08, 2019Looking for a simple and delicious make-ahead breakfast for those busy weekday mornings? This is the frittata for you! I make this during my Sunday meal-prep and divided it into individual containers to store in the refrigerator for the week. Pop it in the microwave for 30 seconds to 1 minute, top with hot sauce and you have a quick and easy breakfast ready to go!

Ingredients
- 4 slices bacon
- 4 cups kale, chopped
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 8 eggs whisked
- 2 ounces white cheddar cheese, shredded
Instructions

Preheat oven to 350°F

In a medium skillet, cook bacon over medium-high heat until crisp.

Remove bacon from skillet with a slotted spoon and let drain on a paper towel.

Add kale to bacon grease and sauté until wilted.

Add whisked eggs and spices to wilted kale. Stir and cook until almost firm.

Sprinkle with cheese and arrange cooked bacon on top.

Bake until cheese is melted and eggs run clear, about 5 to 8 minutes.
Notes
Meal-Prep Tip: Divide frittata into 4 small containers and refrigerate for easy grab-n-go breakfast during the week! Re-heat in the microwave or oven.
