Ingredients
For the Rice Pudding
- 1, 8 oz. bag Miracle Rice
- 1 tablespoon heavy cream (or coconut milk)
- 1 scoop Perfect Keto Chocolate Collagen Powder
- Dash of sea salt
- Dash of cinnamon
- 1 tablespoon nut butter (I used Legendary Foods Chocolate Peanut Butter)
For the Toppings (optional)
- 1 tablespoon sugar-free whipped cream
- 5 almonds, roughly chopped
- 1 tablespoon sugar-free chocolate chips
Instructions

In a small saucepan, bring 1 cup of water to a boil.

Meanwhile, rinse and drain Miracle Rice thoroughly.

When water begins to boil. add miracle rice and cook for 3 minutes. Drain and return to a sauce pan on low heat.

Let any remaining water evaporate and then add heavy cream, protein powder, salt, and cinnamon and stir to combine.

Cook pudding over low heat for 5 to 10 minutes until it thickens, stirring often.

Divide rice into two servings and top with whipped cream, almonds, and chocolate chips. Enjoy!
