Korean Beef Bowl with Asian Green Beans

Tip: Serve over 1/2 white rice + 1/2 cauliflower rice (or all cauliflower rice) to save on calories and bump up the volume a bit more!
Korean Beef Bowl Meal Prep with Asian Green Beans
Makes 4 Servings
Ingredients
For the beef
- 1 pound ground beef or bison (I used 96/4 beef)
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/4 cup soy sauce, tamari, or coconut aminos
- 1 tablespoon sriracha
- 1-2 teaspoons sesame oil
- 2 teaspoons honey or granulated sweetener (such as BochaSweet, Lakanto, or Swerve)
For the green beans
- 1 pound green beans
- 1 teaspoon chili oil or sesame oil
- 1 tablespoon rice vinegar
- 2 tablespoons soy sauce, tamari, or liquid aminos
- 1-2 teaspoons honey or granulated sweetener (such as BochaSweet, Lakanto, or Swerve)
Optional Toppings: Green Onions, Toasted Sesame Seeds, Sriracha, Chili Crunch Sauce
Instructions
- In a medium-large skillet, brown the beef, breaking up into small pieces.
- Once the beef is almost browned, add the garlic powder, onion powder, soy sauce, sriracha, sesame oil, and honey. Stir to combine and simmer over medium-high heat for 5-8 minutes.
- While the beef is simmering, add a 1/2 cup water to a large deep skillet or pot with a steamer basket (if you have one). Steam the green beans until cooked through but still crunchy.
- Pour the green beans into a strainer, removing any excess water from the pan. Return the pan to the stove over medium heat. Add the chili or sesame oil, letting it heat up slightly and then add the green beans back to the pan along with the rice vinegar, soy sauce, and honey. Toss to combine and cook until the green beans reach your desired doneness.
- Serve the beef and green beans over white rice or cauliflower rice, top with green onions, sesame seeds, or other toppings of choice
Notes
- You can use fresh garlic instead of garlic powder if you'd like
- Feel free to swap the green beans for other veggies such as bok choy or edamame.
- Swap the beef for ground chicken or turkey if desired
