Pumpkin Spice Crunchy Granola
May 07, 2019Growing up I was a huge cereal person. I had cereal drenched in skim milk for breakfast and dessert almost every day. Back then I had no idea that I was basically eating a bowl of sugar with a cup of liquid sugar pour over it – No Bueno! After I finally learned what I was actually eating, I cut cereal for good (and skim milk), but I ended up really missing that crunch factor. I then transitioned to adding granola on top of oatmeal or yogurt to replace the sugary cereal. Little did I know that I was still consuming a ton of sugar from that store-bought granola.
But who doesn’t love that mix of sweet, salt, and crunchy? So I decided to make my own. I hope you enjoy this delicious, low-carb crunchy granola recipe that is a perfect on-the-go snack or topping for your favorite smoothie. The Vanilla Collagen Powder adds a perfect hint of sweetness to satisfy any sweet tooth.

Ingredients
- 1 tbsp melted butter, ghee or coconut oil
- 1 egg white (or 2 tbsp)
- 1 scoop Perfect Keto Vanilla Collagen (or Salted Caramel Collagen)
- 1 tsp sea salt
- 1 tsp pumpkin pie spice
- 1/2 cup chopped Pili nuts or macadamia nuts
- 1/2 cup pumpkin seeds or sunflower seeds
- 1/2 cup chopped pecans
- 1/2 cup unsweetened flaked coconut
- 1/4 cup almond meal

Preheat oven to 275 F and line a large baking sheet with parchment paper

In a large bowl, whisk together ghee, egg white, collagen, salt, and pumpkin pie spice

Add macadamias, pumpkin/sunflower seeds, pecans, coconut, and almond meal. Stir well to combine

Spread mixture evenly onto lined baking sheet and bake for 30 to 40 minutes or until golden brown and crunchy
